I am not very particularly knowledgeable about a book for beginners but I did try Balaji Publications–Learn Sanskrit in 30 days. A good book to start with for beginners. Later you can move to books for mediate to expert levels produced by various other publications.
I have a book called “A higher Sanskrit grammar” written by M. R. Kale. It is not suitable for beginners as clear from the name itself but comes handy once you become apt in basics.

Sheep is known as मेषः, goat is known as अजः and there is no specific name for yak in Sanskrit.

I guess their names would be just transliterated in Devnagiri script because they are not Indian animals and therefore won’t have original Sanskrit names.
